Gregg's Famous Margaritas
In a normal size blender, fill to 2" below top with ice. Using the lid center, add 1 part triple sec, 2 parts tequilla, and 4 parts margarita mix. Blend until smooth.
For a fruit flavor, add 6 frozen blueberries or 3 frozen strawberries. For "Blue" margaritas, substitute blue curacao for the triple sec.
Laura's Infamous Bourbon Slush
Ingredients:
2 cups bourbon, 2 cups tea, 12oz frozen lemonade, 6oz frozen orange juice, 6 cups water
Mix and freeze [at least 30 hours]. Serve in a tumbler with maraschino cherry. For Gregg's kicker, top with 1/2" dark rum.
Pasta Sauce
Ingredients:
2 links Italian sausage (mild or hot)
1 14oz can tomato sauce
1 14oz can diced tomatoes
2 bell peppers (best mix is 1/2 red; 1/2 yellow; 1/2 orange; 1/2 green)
1/4 cup chopped sun dried tomatoes in oil
1/4 cup chopped artichoke hearts
1/4 cup green olives (plus juice)
1/8 cup chopped kalamata olives
1 clove garlic, diced
1 red onion chopped
Dried basil, oregano, parsley
Black pepper
Cook Italian sausage in skillet in balsamic vinegar (about 3 tablespoons)
until cooked through. Chop into bite size pieces. In a big pan, heat 3 T balsamic vinegar. Add chopped peppers, onion, and garlic. Cook until till softened a little, but still crunchy. Add tomato sauce, diced tomatoes, sun dried tomatoes, artichoke hearts, green and black olives. Heat through. Add Italian sausage.Add basil (2 T), oregano (2 T), black pepper (2 T) and parsley (3 T).
Bring to a boil. Simmer.
Quesadillas
Flour tortilla, Cheddar cheese, 1 small can diced green chiles
Heat oven to 400F.
Spray cookie sheet (one with sides is best) with Pam. Fold tortilla in half (to make a semi-circle - flat down fold). Open up. Grate cheddar cheese on tortilla. Sprinkle with green chiles. Fold tortilla over (to make a semi-circle), pressing down on it. Cook for 5 minutes. Turn over. Cook for 5 more minutes. Remove from oven. Let cool for a few minutes. Cut into wedges. Serve with sour cream, salsa, guacamole, lettuce, tomatoes, refried beans, etc.
